One of our better New Year Resolutions has been to have a box of vegetables delivered to us each week. I decided we needed to eat more veg and this was a way of encouraging us to do so - and it's worked really well. Our box arrives on a Tuesday morning and it's lovely to see what we have to work with over the coming week. Some things end up with us grabbing our trusty A to Z of AWT - always a good source of information for more unusual stuff (i.e. anything other than potatoes, peas, broccoli or carrots) and finding new recipes to try. Last week we used Turmeric Root for the first time, creating the most fabulous pork dish, and Salmon with Lemongrass Spinach is now a regular feature on the menu. I did worry that we'd end up throwing lots away but in truth we have found that by the end of the week we are quite happy to chuck whatever is left into a sausage casserole for Monday night tea!
There's something so very delicious about Hot Cross Buns, toasted and dripping in butter - but somehow the fact that they are in the shops as soon as we take our Christmas decorations down loses the message that they are an Easter treat, something to help us remember the very poignant message of the crucifixion and resurrection, and the hope that this gives the Christian faith for life ever after. Take time to reflect whilst you enjoy those spicy buttery treats!
